北海道産ブリの消費拡大と普及を目的に、札幌中央卸売市場が主催した「BURI-1レシピグランプリ」。
8月29日に光塩学園調理製菓専門学校で開催されたコンテストでは、光塩学園の学生たちが、
ホテルのビュッフェでの提供を想定したオリジナルレシピを考案しました。
その中から選ばれたグランプリ作品を、札幌東急ホテルズの3ホテルで再現。
学生たちのアイデアが、ホテルの料理人の手によって新たな一皿として登場します。
